I've got a manuscript under review at a high-profile uni press.  I've had other publishers offer me a contract, but I've held out for this press.  The work passed the in-house review as well as the first external review with flying colors, and it is now being considered by a second (and final) tier of reviewers. 

I happen to be applying for postdoc positions, and I'd really like to show this work under 'publications'...the editor's assistant at the press suggested that I could put 'under review' on my postdoc applications.  She does not expect the final reviews to roll in until mid-to-late-March. 

How might you handle this?  Do I put it on the application?  Would it be silly to say 'under review at Uni Press Name'?

I would put it in the cover letter, not on the CV.
