I am applying to Big Research Institution in Canada.
They are asking for BOTH a cover letter AND a statement of research and teaching interests.
What should go in the cover letter? I usually have a 2 pgs letter that includes reserach and teaching, so I am a bit confused.

Your general field would be useful (STEM, humanities, social sciences) as there are disciplinary norms that vary with regards to cover letters. I'm in STEM and have had interviews at two R1-equivalent schools in Canada. When I am asked for a cover letter and a statement of research and teaching interests (which is actually pretty standard), my cover letter is one page and goes: Intro paragraph, paragraph summary of research, paragraph summary of teaching, closing remarks, making sure I address all the job requirements and some other tailoring to the school throughout. You should be able to summarize your research and teaching in one paragraph each, and those who want to know more will look at the statements.
