Do any wise forumties have creative recommendations on how to earn something (additionally) during the summer months as STEM faculty?
In my current position, I cannot put summer salary on grant applications, but I would be able to go to another place for research or teaching or free some time to do something from my place.
I am not entry-level and do not want to take opportunities away people need prior to entering TT. I am also not the superstar, highly established most famous person in my field (yet ;-)...
Hence, most preferably, something that is career enhancing (or at least not the opposite) and also results in some monetary outcome would be really helpful for me at this point.

We have had several threads on this topic which I am too lazy to look up. Forumites reported painting houses, running lawn care businesses, leading tours, lecturing on cruise boats, working as seasonal park rangers, consulting for their industry, summer teaching (classroom, online, and for other universities), serving in a restaurant, working at a seasonal resort, etc.
What is your field and what are your skills?

I was at a professional (rather than an academic) conference in November. One of the booths was Kelley Services (Kelley Girls people). They can put you on a list and you can do special projects through them. I dont know much more about it than that, tough.

Well, I'll put this out there although it seems that the OP may be location-bound.
I knew of an academic couple who devoted their summers to their business, which involved organizing and leading summer bike tours in Europe.
Not the type of thing to advance one's career, but so what.

Duke TIP and Northwestern have summer programs for gifted kids and use professors. Pay is decent and some of the students are bright. Duke also have an online course development opportunity that would let you develop specialized courses which could also be career enhancing, and keep you at home. Pay is generally better than local adjuncting (at least in my area). I've not done either, but I did start to look into one and got some info, and it looked good.

The NSF has a program called "ROA" (I forget what it stands for), but basically allows you to feed off another person's grants, so long as your research goals are consistent, etc. You do have to apply to the program, but you can do it at any time. People do get rejected, but most get accepted, I think.
You can try to adjunct at another college, but usually most colleges have "regulars" they depend on. Still, its worth a shot.
Also, many government facilities have "visiting scientist" programs that can give out modest amounts of money for stipend, apartment, etc. I think some foreign facillties such as Max Planck Inst. probably also have similar things going on.
