I left in 2001 and haven't visited since 2005, but I lived there a long time. So, off the top of my head...
Seward Café:

Blue Nile:
http://www.bluenilempls.com/ There were better, smaller Ethiopian restaurants in the West Bank Neighbourhood, but the only name I remember is Odaa:

Be sure to check out "Eat Street":
http://www.twincitiesdiningguide.com/pages/minneapolis_eat_street_restaurants.asp Harry Singh's was wonderful back in the day, and I have fond memories of Pho 79. There used to be a shuttle to Eat Street.

Village Wok:

Sawatdee:
http://www.sawatdee.com/A local chain with a few locations. They were always good, although again, something smaller may be better.

The Indian place in Seven Corners (Jewel of India?) was pretty good, although the best in town was always Taste of India off 394 in St Louis Park.
I'll post more if I remember any.
