Is it considered unethical or deceptive to leave off the "visiting" from one's assistant professor title on business cards or correspondence?  I'd love not to have the conversation about how temporary my position is with everyone I give my card to.

Yes, it is most definitely unethical and deceptive. I don't see how it benefits you though to do this, since your job is temporary, and you should be broadcasting the fact that you are "on the market."
