Does it make a difference if your institution classifies your work as a doctoral thesis vs. a dissertation?

To whom?  The student?  A potential employer?  What's your concern, specifically?

My understanding is that, in the U.S., that long project/paper demonstrating that the candidate can do independent research is called a dissertation, and that the same project/paper in Europe is called a (doctoral) thesis.  In the U.S., "thesis" usually refers to the long project/paper done by master's students, while in Europe, the master's-level project/paper is called a dissertation.

So, the terminology may vary depending on where you receive your degree and where you're applying for jobs--and on the linguistic quirks of the people with whom you're interacting (I know a few American-born-and-raised faculty who refer to the (doctoral) dissertation as a thesis).  In any case, it's not terribly hard to make your meaning clear.
