I know, teaching 100+ students online seems absurd to most people who have taught online classes.

Even though I haven't been asked to do this yet, I can see where things are headed and I'd like to familiarize myself with any research that's been done on how to provide the most meaningful learning experiences possible (online) with large classes. My underlying question is, if I'm forced to teach very large classes online, how do I make the most of a bad situation?

Are there any readings you recommend?

I don't have any readings to recommend. But if this were me, I would be checking out the "rate this post" and "peer evaluation" functions in Blackboard where students can evaluate other students.

I would also use more MC quizzes, with large question pools and randomized answers and question order to minimize the possibility of cheating. I'm not saying MC quizzes are always great pedagogy, but you gotta do what you gotta do, and replacing some more complex assignments with MC quizzes would be one of my survival strategies.

This would be hellcious, I would think you would spend half your life on blackboard.

Are you meaning teaching 100+ in a single section, or in different, staggered-start sections? I'm doing the latter, and my only advice is to treat it like a 9-5 job, use a careful combination of rubrics and personalized comments, and above all, KEEP UP WITH YOUR GRADING. If you get behind, catching up is hell, and can cause marital problems.
