Yes, enthusiastically accept the adjunct gig.

If you do get the VAP, you can avoid being an a$$hole by 1.) sincerely apologizing to the adjunct institution 2.) letting them know as soon has you have a written offer 3.) If possible, offering to recommend other individuals who would be interested in the adjunct courses.

No sane individual would fault you for reneging on your agreement to adjunct.
