It seems clear that you shouldn't put in tons of extra work to "help out" when there has been a demonstrated unwillingness to value what you bring to the table.  What is key is to be as sweet and gracious as possible while you decline repeatedly, because it's harder to develop a vendetta against someone who is kind than someone who is hostile.  Even though hostility is a rational response, channel it into a will to move out and up.

But keep in mind that only you know your situation and maybe everything we're telling you doesn't fit at all.

In my case, though, it seems clear that there's no limit on how much I could invest in my department's needs and still not do enough to make some people happy. I've made it clear that I'll do as much as my limited time and many responsibilities permit, which may not be enough to satisfy everyone. But, you know, I think at this point I'd rather have one last decent year as an instructor than year after year of frantically trying to figure out what else I have to do to earn a tenure-track job.

Good idea.  I would withdraw from these tasks and give the reasoning that others said.  "Gosh, I'd just love to do scut task A,B, and C, but it does not look like I am going to get a tenure-track line here so I need to focus on the job search."

Say no, but very sweetly, and give the reason that politely tells them they can't get the milk for free.
