I had some fabulous tripe in an Italian restaurant last fall.

I've seen that come out of the original owners too.
We have a fabulous butcher who, aside from pork, will not only sell you meat from poultry, beef and lamb, but also all the innards. Mmmm. And real soup bones. Remember those?
But I think you have to ask for the balls.
I once got a job offer to work on the killing floor. I didnae take it.
I've seen a few of these things come out of the animal too though, along with the slaughtering process. It made me think, if I'm going to eat meat, I might want to try dishes that use up most of the animal.
