Make your own burritos....

Heat:
veggie crumbles with chili powder and a bit of taco sauce
beans (whole pinto and refried)
tortillas in the oven on 125 or so
crisp taco shells

Prep:
dice onion
chop tomatoes
shred lettuce

Salsa, sour cream, and shredded cheese on the table

Painless and yummy after a long day!

Progresso 50% less salt Minestrone soup. I'm working tonight.

We recently discovered that the local rotisserie chicken place delivers, so that's dinner tonight.  Ah well, at least it's healthier than gourging ourselves on pizza.

It's generous of you to share your dreams. Please edit yesterday's and insert Udipi Indian restaurant for the rib place. Saw a great concert in the very impressive new Robinson Hall theater--a sort of battle of the bands between Gypsy, Klezmer and Russian folk singers. The nice kind of battle that ends up in a jam session for all.

Yesterday was peppercorn crusted flat iron steak (recall schmrecall - I throw caution to the wind) with a garlic-balsamic reduction, olive oil and parmesan seasoned red potato wedges with lemon parmesan mayo, and a salad of arugula and spinach with balsamic vinaigrette paired with a local Petit Verdot. Lovely!

Tonight, it's Spicy Roast Chicken from last month's Food and Wine magazine with some lemon and olive couscous and a local Seyval Blanc. Can't wait!

Spicy Sweet Potato Stew

Heat 2 tbsp. oil in a large non-stick skillet over medium-high heat.

Add 1 large chopped onion and cook until translucent.

Mix in 2 bunches (or one bag) fresh spinach, washed and
3 cloves garlic, minced.
Let spinach wilt a bit, but not so much that it becomes a mushy mess.

Add:
3 chopped sweet potatoes
3-4 diced tomatoes with their juices
1 can low-sodium V8 (or 12 oz. regular tomato juice)
2 Tbsp grated fresh ginger and
3-4 dried red peppers.

Reduce the heat to medium-low; cover. Simmer about 5 minutes, then

Add 1 small bag frozen green beans. Cook another 5 minutes until beans are hot.

Stir in 1/2 C peanut butter until well-blended and hot, about 1 minute.

Serve with a good bread warmed in the oven and a nice salad (we like spinach salad: bag spinach, sliced purple onion, cherry tomatoes, feta cheese, olives).

This is a great dinner for in front of the fire on a cool evening.

Yum!

That's what we're having tonight -- the spousal unit likes to have guacamole to spoon on, so he's in charge of making that.

Yesterday Mr. ABD and I could not decide what to make for dinner so we decided to hit the grocery store and each select an ingredient and then try to figure out something we could make with both. Mr. ABD picked up some egg roll wrappers and I picked up a blood orange. We ended up making a sort of Latin/Asian fusion dinner with some beef and black bean taquitos out of the egg roll wrappers served with this guacamole and salsa made with the blood orange:

Blood Orange Guacamole
1 avocado, mashed
3 cloves garlic, grated
Juice and zest of half of one blood orange
3 tbsp light mayo
3 tbsp light sour cream
1 tbsp chili powder
1/2 tsp kosher salt
a couple of grinds of black pepper

Blood Orange Scented Pico de Gallo
1/2 cup grape tomatoes, quartered
Half of one (fresh, not dried) red Thai chile, finely diced
Half of one English cucumber, diced
1/4 c. red onion, finely diced
1/4 c. cilantro, chopped
Juice and zest of half of one blood orange
1 clove garlic, grated
1 tbsp EVOO
Kosher salt, black pepper to taste

For the taquitos, Mr. ABD cooked some ground beef (you could use vegetarian crumbles, too) with some black beans with the old standby taco seasoning packet, cooled it for a bit, and then wrapped it in the egg roll wrappers and deep fried them in vegetable oil. They were seriously tasty - and VERY filling - and I wouldn't recommend this for anyone who has cholesterol issues. But it was all super good. We also had some brown rice seasoned with sofrito, green onions, cilantro, and some cheese melted on top.


Tonight Mr. ABD is away at a conference, so I plan on having a salad with arugula, spinach, pears, some grilled chicken, and some thinly sliced fresh Parmigiano - probably with some sort of lemony-raspberry vinaigrette made with a local raspberry wine. Not too bad for Oscar night.

We had a roast lamb shoulder.  It was deboned and butterflied, so I shoved garlic and fresh rosemary in and tied it up.  We served it with green beans, roast squash, strong mustard and an Italian red.

Leftover brownies for dessert!
