Fidel's Black Bean Soup

Simmer
1 pound dried black beans in
12 cups water with
2 bay leaves for about 2 hours.
Add
3 chopped green bell peppers
2 chopped sweet onions (large ones)
1 Tbsp ground cumin
2 Tbsp oregano (fresh preferred, but not necessary)
1.5 Tbsp sugar
2 tsp salt
2 Tbsp liquid smoke.
Simmer another hour or so.

Toppings:

2 avocados diced chunky, with
2 Tbsp lime juice.

1 red onion, sliced really really thinly.

2 jalapeno or serrano peppers, diced fine.

Light sour cream, for nonvegans.

Ladle bean soup into a bowl and top with avocados and red onion; add peppers and sour cream as desired.

Serves about 8.

I had to buy a lot of cilantro for a recipe.  Now, I'm stuck with it.  Anyone know a good recipe that uses a lot of cilantro?  I might throw it in pasta with some parmesan, on the theory that pasta with some cheese + one other ingredient is always safe.  Thoughts?

I was thinking there had to be a really good reason for this. Then I remembered you are a marathoner. So "crazy" is a really good reason. <grin> While I consider runners generally insane, you have my respect.


Boring meal at chez moi: a ground beef patty (a little ketchup & spicy mustard, no bun), brown rice, and a salad. And a large glass of water.

Some tasty ideas here! 

We had French Toast (oatmeal bread) and Turkey Bacon for dinner tonight.  I used egg whites and skim milk because Mr. Yemaya and I are both trying to eat healthier.  I mixed cinnamon and nutmeg in for taste. 

Magistra - Cilantro's a yummy additive for turkey burgers.  Mix it with ground turkey, egg whites, some grated cheese, garlic and BBQ sauce and you've got yourself a bit of a pseudo-southwestern burger.

We went to Famous Dave's pit BBQ.  Brisket, ribs, chicken, creamy slaw, beans, corn, corn muffin, and a Bass Ale.

Yup...26.2 miles tomorrow morning starting at 8:30 a.m. here in Jacksonville, FL.

At mile 19 I will think I am crazy. Absolutely crazy. However, 100% of the proceeds go to breast cancer research and this marathon alone has raised $800,000!

My next marathon with be in Salt Lake City, Utah.

Have you tried www.supercook.com?  You put in ingredients you have, then it spits out recipes that use them.
