Hi

I am a postdoc and I have recently been invited to give a talk at a symposium. This would be a great opportunity for me but the conference is overseas - read 'expensive'. The organizers cannot cover my expenses, nor can my lab (this talk would not cover work done at my current lab and the maximum amount of conference money per year allowed by my PI would not be sufficient anyway).

I am not a US citizen and my field is broadly speaking in cognitive neurosciences.
Would anyone have any advice as to where I could find funding?

Can your national/international discipline association help out? Does your former uni have an alumni fund that you could use? It does sound like an offer you should take if you can. If you are in the US, you can write the expenses off when it comes time for taxes, but I don't know how that applies abroad.
