This is why I insist on using Eudora and refuse, to the great annoyance of my system administrators, to use Outlook.  Eudora has a setting that requires a two-step process for sending emails: queue, and then send.  This of course is the equivalent of hitting draft instead of send, but the point is that you cannot send a message with only one step.  This has saved me from some difficulties - I know I'm a bit of a hothead.

My e-mail horror story: I had a student with a learning disability who had permission to take hu's exams outside of class, and with more time. To confirm hu was taking it at the campus "learning center" and would not be in class, I sent hu an e-mail -- or so I thought. I sent it to the whole class instead, thereby violating strict confidentiality rules (though fortunately, it's not as if I released any specifics about hu's learning disability). I apologized profusely (already envisioning the lawsuit brought by hu or hu's parents against me, dumb lil' ol' grad student), and hu was more than cool with it and very forgiving, thank God. But it was a different story with the "learning center" people who were quite icy. I have since learned not to use the "address book" function on e-mail and just type in one address at a time!!
