I have found it most impressive when a candidate sends an e-mail to me the same day as the interview.  This is important to me because it reiterates their confidence in using technology.

At the same time, I find myself delighted by hand-written correspondence.  Sent immediately after the interview, such letters show a level of interest and follow-through which I admire.
