Only in Wisconsin ...
Xiaochun Li has become well known for cutting the cheese. A mechanical-engineering professor at the University of Wisconsin at Madison, Mr. Li has been enjoying a slice of fame ever since he devised a laser technique for carving a better cheddar.
Using a cold laser, similar to those used in eye surgery, he found that he could slice cheese thinner than standard cheese-cutting machines could, and that he could make the slices into a variety of shapes. The new method also avoids problems
