When it comes to fighting for respect in the cerebral world of academe, home economics has always had an arm -- or is it an apron? -- tied behind its back.
Ask people in the field for a reason to take home economics seriously, and they'll give you a litany -- social reform, bacteriology, nutrition, ergonomics, rural electrification, women's rights. Home economists led the charge on all of those fronts.
